Today, I may need cookies

And anyone that knows me, knows I love the urban legend Neiman Marcus cookies (read the story here).  They are delightful.  I cook them and freeze them.  I eat them cold.  It's a problem.
Or was a problem until I went gluten/dairy-free/vegetarian (for the most part).  So last week, I embarked on a mission to convert the recipe.  I think I succeeded.

** Note: Caveat to the gluten-free-ness - it does contain oatmeal!  So, if cooking these for a friend, please be sure oatmeal is on their safe list.

I began by using a recipe from the Gluten-Free Goddess (looourve this website), which you can find here.  I combined all dry ingredients to make the flour.  Then, I switched back to the Neiman's recipe. Follow the instructions and use the substitutions in parenthesis for my version of the cookies.

2 1/2 cups  Blended oatmeal  (blend to a fine powder)
2 cups  Flour  (Substitute using Gluten-Free Goddess Flour mixture)
1 tsp     Baking Soda
1 tsp     Baking Powder
1/2 tsp  Salt

1 cup   Butter (Substitute Vegetable shortening)
1 cup  Granulated sugar
1 cup  Brown sugar
2 tsp   Vanilla (double the original amount)
2 eggs  (Substitute Ener-G Egg Replacer)
12 oz  Chocolate Chips

Follow the instructions for a tasty treat!  I am sure this will evolve next time (like, perhaps, leaving out the baking soda from one or the other) but for now, it's a start!  I like to freeze the dough and make a few at a time.

Enjoy!
